But there does come a time when you’ll want to take a few steps down a couple aisles to grab other necessities. No matter how you spend your time at the grocery store, there’s a few specific things you’ll want to grab, so you can make Carla Hall’s Kale Hummus Flatbread! You can make your own hummus, or you can grab some store-bought hummus for an even faster recipe! This is a great, quick snack or light lunch you’ll want to put together!

The Chew: Kale Hummus Flatbreads Recipe

Carla Hall’s Kale Hummus Flatbread is a quick and easy way to serve up a light meal or a snack using a few store-bought shortcuts. (socialmediarts / Flickr)

  • 1 small red onion – peeled, finely diced
  • 1/4 C chicken stock
  • 1 tsp red chili flakes
  • 2 tbsp olive oil
  • 1 bag chopped kale – 8 oz, about 6 C
  • 1 tbsp red wine vinegar
  • kosher salt and freshly ground black pepper

For the Hummus:

  • store-bought hummus
  • zest and juice of 1 lemon
  • finely chopped chives and parsley

To Serve:

  • olive oil
  • fresh pita bread

The Chew: Kale Hummus Flatbreads Recipe Directions

  1. In a large saute pan, add olive oil and heat over high heat
  2. Add the red onion and cook until nearly tender, about 4 minutes
  3. Add the kale and cook until slightly wilted
  4. Add the vinegar, chicken stock, and chili flakes, then cook for another 4-5 minutes
  5. Season with salt and pepper

For the Hummus:

  1. In a medium bowl, add the store-bought hummus, lemon juice, chives, lemon zest, and parsley, then mix
  2. Season with salt and pepper

To Serve:

  1. Preheat a grill or grill pan to medium heat
  2. Brush the pita on both sides with olive oil, then put on the grill
  3. Let cook until charred and warmed through, about 2 minutes per side
  4. Remove the pita to a plate
  5. Spread the hummus on top of each pita, then top with kale
