The Chew: Pasta E Fagioli Recipe

  • 1 medium yellow onion – peeled, finely chopped
  • 2 tbsp tomato paste
  • 3 C borlotti beans or kidney beans – drained, rinsed
  • Parmigiano-Reggiano cheese – grated
  • kosher salt and freshly ground black pepper
  • 5 tbsp olive oil
  • 1/2 C parsley – finely chopped, divided
  • 8 C vegetable stock or chicken stock
  • 2 C broken fettuccine
  • rustic Italian loaf – toasted, to serve

The Chew: Pasta E Fagioli Recipe Directions

  1. In a large Dutch oven over medium-high heat, add the onion, olive oil, and 1/4 C parsley
  2. Cook for 8-10 minutes to brown and soften the onion
  3. Add in the tomato paste and stir, then drop the heat to medium and cook for 5-7 minutes
  4. Season with salt and pepper
  5. Add the vegetable stock and half the beans
  6. Mash the beans then add the rest of the beans to the pot and bring to a simmer
  7. Let cook for 30 minutes, then add the pasta and cook for 10 more minutes
  8. Season with salt and pepper, then remove from the heat
  9. Add the rest of the parsley and stir
  10. Serve with grated Parmesan on top and toasted, crusty Italian bread
