The beautiful and talented Michelle Williams was thrilled to join Mario Batali in the kitchen on The Chew. She admitted that while she’s certainly not a super talented chef, she does have some experience in the kitchen and a passion for cooking. These days, that’s all you need right? Because pumpkin is such a popular ingredient in the fall, Mario wanted to come up with a more unique way to prepare it. Together, he and Michelle prepared Pumpkin Bruschetta, making for the ultimate finger food!

The Chew: Pumpkin Bruschetta Recipe

Michelle Williams joined Mario Batali in the kitchen to prepare Pumpkin Bruschetta as the ultimate fall appetizer or snack. (r_kim / Flickr)

  • 5 C pumpkin – 1/2-inch dice
  • 1/4 C oregano leaves – roughly chopped
  • 1 lemon – zested, juiced
  • kosher salt and freshly ground black pepper
  • 6 tbsp olive oil – divided
  • 1/4 C Pecorino Romano – grated
  • 1/4 C parsley – roughly chopped
  • 1 tsp red pepper flakes

To Assemble:

  • 2 cloves garlic – peeled
  • aged balsamic vinegar – to garnish
  • 1 crusty rustic bread – sliced 1-inch thick, sliced on bias
  • Pecorino Romano – shaved, for garnish

The Chew: Pumpkin Bruschetta Recipe Directions

  1. In a large non-stick saute pan, add 2 tbsp olive oil and heat over medium-high heat
  2. Add pumpkin and cook until tender and slightly caramelized, about 5-7 minutes
  3. Season with salt and pepper
  4. Remove half of the roasted pumpkin to the bowl of a food processor
  5. Add 1/4 C of olive oil and pecorino, then pulse until smooth and season with salt and pepper as needed
  6. Remove the rest of the pumpkin into a large bowl
  7. Add parsley, oregano, lemon juice, lemon zest, and red pepper flakes, then toss to combine
  8. Season with salt and pepper and add more olive oil if needed

For the Grilled Bread:

  1. Preheat a grill or grill pan to medium heat
  2. Brush the bread slices on both sides with olive oil
  3. Put the slices on the grill and grill until charred, approximately 2-3 minutes per side
  4. Remove from the grill and rub with garlic

To Assemble:

  1. Spread the pumpkin mixture on the grilled bread
  2. Top with some of the cubed pumpkin salad
  3. Garnish with shaved Pecorino and a splash of aged balsamic
