The Chew: Sweet Potato & Chicken Sausage Hash Recipe

  • 1 lb loose breakfast chicken sausage
  • 1 small yellow onion – diced
  • 1 jalapeno – diced
  • 1/4 C water
  • kosher salt and pepper
  • 1 tbsp olive oil
  • 2 medium sweet potatoes – diced
  • 1 red bell pepper – diced
  • 2 tbsp fresh sage – chopped
  • 4 large eggs

  1. Preheat the oven to 400 degrees
  2. In a large, cast-iron skillet over medium-high heat, add olive oil and chicken sausage, breaking up the sausage into small chunks as it cooks
  3. Cook until golden brown, about 5-7 minutes
  4. Remove from the skillet onto a plate
  5. Into the same skillet, add olive oil, onions, and sweet potatoes, and cook until slightly soft and golden brown, about 10-12 minutes
  6. Add red pepper, water, sage, jalapeno, and browned sausage, then mix
  7. Make 4 indents in the mixture, and crack an egg into each indent
  8. Cover with foil, then place in the oven for 7-10 minutes
  9. Serve with hot sauce
