Skye Jackson, one of the stars of Disney Channel’s Bunk’d, joined Carla Hall in the kitchen. She shared that she loves spicy food like jerk chicken and some homemade collard greens, just like Carla! Carla thought they would have fun preparing a summer dish, and it’s a good thing Skye was a huge fan of shrimp as well! The 14-year-old has literally been acting her life, even having appeared in commercials when she was just a year old! She’s also an adorable fashionista and loves mixed prints! Carla and Skye had a ball preparing Tropical Grilled Shrimp Salad!

The Chew: Tropical Grilled Shrimp Salad Recipe

  • 1 lb shrimp – peeled, tails on, deveined
  • 2 red bell peppers – 1-inch squares
  • 1 pineapple – cored, sliced in 2-inch pieces
  • 1/4 C olive oil
  • 2 green bell peppers
  • 2 small red onions – peeled, cut into wedges
  • 2 mangoes – peeled, cut into 2-inch pieces

For the Lime Mint Vinaigrette:

  • 2 tbsp honey
  • 3 tbsp mint – chopped
  • kosher salt and freshly ground black pepper
  • 1 lime – juice and zest
  • 1/3 C olive oil
  • 1/4 C pumpkin seeds – toasted, to garnish

  1. Preheat the grill or grill pan to medium-high heat
  2. Brush the shrimp with olive oil, then season with salt and pepper
  3. Put the peppers and onions on skewers, then put the pineapple and mango on skewers, alternating pieces
  4. Brush the skewers with olive oil then season with salt and pepper
  5. Put the shrimp and skewers on the grill and let cook until tender and charred, about 3 minutes per side
  6. Take the skewers and shrimp off the grill
  7. Remove the vegetables and fruit from the skewers and put into a bowl with the shrimp

For the Dressing:

  1. In a medium bowl, add the lime zest, lime juice, mint, olive oil, and honey
  2. Whisk to mix then season with salt and pepper
  3. Drizzle over the salad then toss
  4. Garnish with pumpkin seeds
