  • 2/3 C water
  • 1/3 C raw almonds – with skin
  • 1/3 C quinoa – pre-rinsed
  • 16 Medjool dates – pitted
  • 1/3 C natural crunchy peanut butter

Rachael Ray: Peanut Butter Protein Bars Recipe Directions

  1. Put the quinoa and water in a small saucepan
  2. Cover, bring to a boil, then reduce the heat to a simer and cook for 12-15 minutes or until water is absorbed
  3. Set aside to cool in a heat-proof bowl and keep in the fridge for about 2 hours
  4. Add the dates to a food processor and pulse until a ball is formed
  5. Remove the dates and put in a bowl
  6. Add the almonds to the food processor and pulse until finely minced
  7. Add peanut butter, dates, and cooled quinoa to the almonds in the food processor and pulse until all ingredients are combined
  8. Put the ingredients in a large bowl and shape into 8 bars
  9. The bars can be stored in an airtight container in the fridge for a week
