While he crafted twelve different recipes, Rachael had a recipe of her own to share. Richard had ingredients and kitchen tools flying everywhere as he worked his butt of in the kitchen, but Rachael was able to calmly craft her own 5-ingredient meal. Her Roast Squash with Chicken Thighs is a fall-themed meal your whole family will love. She used acorn squash and her maple-mustard glazed chicken to put this dish together, and although she served just one meal, it was an absolute delight!

Rachael Ray: Roast Squash With Chicken Thighs Recipe

From the Pantry:

  • extra-virgin olive oil
  • nutmeg – freshly grated or ground (optional)
  • garlic
  • salt and pepper

For the Squash & Chicken:

  • 8 bone-in, skin-on chicken thighs
  • 1/2 C maple syrup
  • 2 acorn or Delicata squash
  • 1/2 C grainy Dijon mustard
  • 3-4 sprigs rosemary – leaves stripped, chopped

  1. Preheat the oven to 400 degrees
  2. Halve the squash, then remove the seeds
  3. Slice into thin (1/2-inch thick) half moons
  4. Pile the squash on a rimmed, nonstick baking sheet and drizzle with about 2 tbsp extra-virgin olive oil
  5. Season with salt, pepper, and nutmeg
  6. Toss the squash to coat, then arrange in a single layer
  7. In a large mixing bowl, mix the syrup and mustard
  8. Add 4 cloves chopped or grated garlic, a heavy pour extra-virgin olive oil, and rosemary
  9. Season the chicken with salt and pepper, then add to the bowl and toss to coat
  10. Arrange the chicken over the squash in a single layer, then roast for about 35-40 minutes until deep golden
  11. Serve the chicken with the squash on the side
