Rachael Ray: Vivian Howard Okra Oven Fries Recipe

  • 2 tbsp extra-virgin olive oil
  • 1 tsp salt
  • 1 lb okra (20-25) – split or quartered lengthwise
  • 2 tsp ground coriander
  • 1/4 tsp black pepper

  1. Preheat the oven to 400 degrees
  2. In a medium bowl, toss the okra with coriander, olive oil, and salt and pepper
  3. Spread the okra in a large baking sheet, using two if needed to give them room to roast, not steam
  4. Put the pan on the middle rack of the oven, then toss after 10 minutes
  5. Cook another 10-15 minutes
  6. When  okra is done, it should be crispy but not burnt
  7. Serve at room temperature
