For the Salt-and-Butter Roasted Pecans:

  • 2 tbsp melted butter
  • 2 C pecan halves or pieces
  • 3/4 tsp salt – divided

For the Cheeseball:

  • 1/3 C butter
  • 1/4 C + 2 tbsp cream cheese
  • 2 tbsp finely chopped scallions
  • 1/4 tsp salt
  • 2 tbsp chopped flat-leaf parsley
  • 1/4 C high-qualityblue cheese (Maytag brand, if possible)
  • 1/4 C fresh goat cheese
  • 1/4 C chopped dates
  • 1/2 tsp hot sauce
  • 1/3 C Salt-and-Butter-Roasted Pecans – roughly chopped

For the Salt-and-Butter Roasted Pecans:

  1. Preheat your oven to 350 degrees
  2. Toss the pecans in the melted butter and 1/2 tsp salt
  3. Spread into a single layer on a baking sheet, then put the sheet onto the middle rack of the oven
  4. Roast the pecans for 11 minutes (for halves) or 10 minutes (for pieces)
  5. Take the slightly darkened pecans out of the oven and add the rest of the salt
  6. Let cool for five minutes
  7. In the bowl of a mixer fitted with the paddle attachment, combine all the ingredients except for the parsley and pecans
  8. Mix until it comes together as a loose and sticky mixture
  9. Transfer the bowl to the fridge for 15 minutes to make it easier to shape into a ball
  10. Once stiff, make the ball, then roll the ball in the pecans, then the parsley
