Michael Symon was joined in the kitchen by a viewer who admitted that she was getting sick and tired of serving her kids the same food over and over, and they were tired of eating it as well! She knew she wasn’t exactly a professional chef, so she needed some help in the kitchen to put together a different meal that her entire family would enjoy, and she could successfully cook. Together, she and Michael Symon made chicken scaloppine with red wine mushroom sauce.

The Chew: Chicken Scaloppine + Red Wine Mushroom Sauce

  • 1/3 C flour
  • 1 lb crimini mushrooms – thinly sliced
  • 1/2 C dry red wine
  • 3 tbsp cold unsalted butter – cubed
  • kosher salt and fresh cracked pepper
  • 1/4 C olive oil
  • 2 lbs chicken breasts – pounded to 1/4-inch thick
  • 2 cloves garlic – sliced thin
  • 1/2 C sherry
  • 3 sprigs fresh thyme

The Chew: Chicken Scaloppine With Red Wine Mushroom Sauce Recipe Directions

  1. In a medium skillet over medium high heat, add olive oil and heat
  2. Meanwhile, a shallow baking dish, add flour and season with salt and pepper, then mix
  3. Dredge the chicken in the flour mixture, shaking off any excess
  4. Add the dredged chicken to the skillet, saute for 4 minutes per side or until golden brown
  5. Transfer the chicken to a platter
  6. In the same skillet, add the mushrooms, saute until the are browned and the juices have evaporated, about 5 minutes
  7. Add the garlic and saute 30 seconds
  8. Stir in the red wine and sherry, bring to a boil, and let reduce by 1/3
  9. Remove from the heat and whisk in the cold butter
  10. Add the chicken and thyme sprigs to the wine and butter mixture
  11. Transfer to a platter and serve
