Michael Symon welcomed a woman named Cindy from his hometown of Cleveland, because she couldn’t make her own gravy. She struggled to make it without coming out with lumpy gravy, saying her mom’s recipe was way too complicated for her. To prevent her from going and buying jarred or canned gravy for Thanksgiving this year, Michael explained an easy way to make your own turkey gravy at home.

  • 4 tbsp all-purpose flour
  • 1 C turkey stock – substitute with chicken stock
  • kosher salt and freshly ground black pepper
  • 4 tbsp turkey fat – from the pan, substitute with butter
  • 2 C turkey juice – from the pan
  • 1 tbsp fresh thyme leaves

  1. Pour the pan drippings into a fat separator or measuring cup
  2. Put the roastings pan on the stove top over medium-high heat
  3. Add the fat from the pan and the flour, and whisk until combined
  4. Cook until the flour flavor has cooked out and the flour turns a light golden color, about 2 minutes
  5. Add the juice from the pan, a little at a time, whisking constantly until there are no lumps
  6. Bring to a simmer and cook until thick and the flou taste has cooked out – about 30 minutes
  7. Add some turkey stock if the gravy is too thick
  8. Finish with fresh thyme and season with salt and pepper
  9. Serve hot with turkey
