The Chew: Carrot Walnut Oat Bars
As Daphne Oz pointed on The Chew, many breakfast or snack bars can have the same amount or even more calories and sugar than a candy bar! Because of that, she was inspired to make her own breakfast bar that not only tastes just like carrot cake, but is made with all-natural ingredients that you can feel good about. Plus, each bar is only 160 calories! Daphne also pointed out the importance of eye health. After sharing that she already took her toddler Philo for an eye exam, she promoted these carrot bars as a great way to enjoy foods that promote eye health.

The Chew: Carrot Walnut Oat Bars Recipe Ingredients

Daphne Oz’s Carrot Walnut Oat Bars are just 160 calories, which means they’re a much healthier option compared to most other protein bars! (personalcreations / Flickr)
- 1/4 C walnuts – toasted
- 1/2 C unsweetened shredded coconut
- 1/2 tsp ground nutmeg
- 3 tbsp almond butter
- 3 tbsp maple syrup
- 2 C old fashioned oats
- 3 tbsp ground flaxseed
- 2 tsp ground cinnamon
- 2 C ripe bananas – mashed, about 3 bananas
- 1 1/2 tbsp coconut oil – melted + more to grease the pan
- 2/3 C carrots – grated
The Chew: Carrot Walnut Oat Bars Recipe Directions
- Preheat the oven to 350 degrees
- Grease an 8×8-inch square baking dish with coconut oil
- Line the baking dish with parchment paper, then grease again using coconut oil
- In the bowl of a food processor, add the walnuts, oats, and flaxseed, then pulse until ground
- Add the cinnamon, coconut, and nutmeg, then pulse
- Add the almond butter, mashed bananas, maple syrup, and coconut oil, then pulse
- Add the carrots and pulse again until thoroughly mixed
- Transfer the batter to the prepared baking dish
- Smooth the top using a spatula, then bake until golden brown and set, about 15-20 minutes
- Remove from the oven and place on a baking rack to cool
- Cut into the bars once cooled, and serve
