Food science guru, TV personality, and author of “Everyday Cook” Alton Brown joined Mario Batali in the kitchen. Alton is perhaps one of the most recognizable faces of the Food Network, so the hosts of The Chew were thrilled to have him on the show. Alton explained that his latest book is actually filled with recipes that he likes to make at home, so you can get a little insight into what he likes to eat. For his visit to the show, he wanted to share a unique and delicious pasta recipe. His Pasta Carbonara is a fun twist on a popular dinner favorite, using breakfast foods!

The Chew: Alton Brown Breakfast Carbonara Recipe

Alton Brown joined his pal Mario Batali in ‘The Chew’ kitchen to prepare his Breakfast Carbonara as a simple, show-stopping meal! (joyosity / Flickr)

  • 1/4 C parsley leaves – finely chopped
  • 1 tbsp Kosher salt
  • 8 oz breakfast sausage
  • 4 large eggs – at room temperature
  • 1 tsp freshly ground black pepper
  • 1 tbsp orange zest
  • 1/4 C fresh bread crumbs
  • 8 oz linguine (whole wheat, if possible)
  • 4 large eggs – at room temperature
  • 3 oz Pecorino Romano – finely grated

The Chew: Breakfast Carbonara Recipe Directions

  1. In a small bowl, mix the orange zest, bread crumbs, and parsley, then set aside
  2. In a large saute pan over medium-high heat, add 2 qts water, linguine, and the salt
  3. Cover and bring to a boil, then reduce the heat to low and cook for 4 minutes, or until the pasta is al dente
  4. Meanwhile, in a 12-inch cast-iron skillet over medium heat, add the sausage and cook until browned
  5. Add the scallions and cook until fragrant
  6. In a small bowl, add the Pecorino, eggs, and pepper, then whisk
  7. Drain the pasta, saving 1/4 C of the cooking water
  8. Add the pasta to the sausage, then toss to coat
  9. Remove from the heat, add the egg mixture, then more pasta water if needed
  10. Serve right away with a good amount of the parsley mixture added on top
