The Chew: Breakfast Beans & Rice
Clinton Kelly came up with a great way to use leftover salsa. If you’ve only got a little bit left in the jar and don’t know what to do with it, transform it into a delicious and healthy breakfast dish! Clinton shared a recipe for Breakfast Beans and Rice that he actually makes for himself often! Beans and rice are paired perfect with salsa and a fried egg! This is one delicious way to put salsa to good use!

The Chew: Breakfast Beans & Rice Recipe Ingredients

Clinton Kelly found a way to take leftover salsa and turn it into a loaded breakfast fish! His Breakfast Beans a Rice is a great way to start your day. (saucysalad / Flickr)
- 1 can black beans – 14-oz, drained
- hot sauce – to taste
- 2 tbsp scallions – sliced
- 2 tbsp scallions – sliced
- 2 fried eggs
- 2-4 tbsp salsa
- 2 C cooked rice
- 1/4 C cilantro – roughly chopped
- 1 tbsp olive oil
- kosher salt and freshly ground black pepper
The Chew: Breakfast Beans & Rice Recipe Directions
- Put a medium skillet over medium heat
- To a jar of salsa, add about 1/4 C of water
- Close the jar and shake to loosen the salsa
- Transfer to the skillet, then bring to a simmer
- Add the beans and rice, stirring to warm
- Season with salt, pepper, and hot sauce
- In a second skillet, add a tbsp of olive oil and heat over medium-high
- Crack the eggs into individual bowls
- When the pan is hot, gently pour into the pan
- Let cook until the white is cooked, but the yolk is still runny, about 5 minutes
- Put on top of the rice and beans
- Garnish with scallions and cilantro
