“White Girl” actor Justin Bartha was thrilled to be in the kitchen with the talented Mario Batali on The Chew. While they had a blast talking about authentic Italian food and visiting the beautiful country, Mario asked for Justin’s help in making one popular Italian dish. Justin badly wanted to learn how to make chicken parm at home, so he was beyond excited to cook Chicken Milanese Parmesan with Mario. Sweetly enough, Justin actually remembered watching Mario cook when he was in college and growing up, so it was neat to see him fulfill a dream right there on The Chew!

The Chew: Chicken Milanese Parmesan Recipe Ingredients

Justin Bartha had a dream come true as he learned how to make Chicken Milanese Parmesan with Mario Batali. (kurmanphotos / Flickr)
- 1 C all-purpose flour
- 1 C panko breadcrumbs
- 2 tbsp fresh oregano – chopped
- 1 lb ball fresh burrata – divided
- Kosher salt and freshly ground black pepper
- 4 chicken thighs – boneless, skinless, pounded to 1/4-inch thick
- 3 large eggs – beaten
- 1/4 C parsley – chopped
- 3 tbsp olive oil
- 1 C marinara sauce
For the Caprese Salad:
- 1 tbsp champagne vinegar
- 1 small bunch fresh basil
- flaky sea salt
- 1 lb assorted ripe Heirloom tomatoes – sliced 1/4-inch thick or cut into wedges
- 3 tbsp olive oil
- 1/4 C chives – sliced thin
The Chew: Chicken Milanese Parmesan Recipe Directions
- Preheat the broiler and adjust the oven rack to the top shelf
- Prepare a dredging station by arranging three shallow baking dishes
- In one dish put flour, the next with beaten eggs, and the third with panko bread crumbs
- Season the bread crumbs with oregano, parsley, and salt and pepper
- Season the chicken with salt and pepper, then use tongs to dredge the chicken in the flour, shaking to remove any excess
- Dip into the egg and dredge in the seasoned panko bread crumbs, shaking to remove any excess
- When coated, place the chicken on a plate
- In a large saute pan, add olive oil and heat over medium-high heat
- Add the breaded chicken cutlets and cook for 3-5 minutes per side, until golden brown
- Remove the cutlets to a baking sheet fitted with a baking rack
- Add a thin layer of marinara to the chicken, then a spoonful of burrata
- Put under the broiler for 2 minutes, until browned at the edges
- Serve with Caprese Salad
For the Caprese Salad:
- In a small bowl, add the champagne vinegar and drizzle in olive oil, then whisk to mix
- Season with salt and pepper
- Stack the tomatoes and burrata cheese in layers
- Wedge the basil leaves in between the cheese and tomato layers
- Add a sprinkle of finely diced tomatoes
- Add a drizzle of dressing, then garnish with chives and flaky sea salt
