The Chew: Chicken & Waffles On A Stick Recipe Ingredients

- 1 tbsp salt + more as needed
- 1 tbsp garlic powder
- 1 tbsp cayenne pepper
- 1 C buttermilk
- 2 C all-purpose flour
- canola oil – to fry
- 1 lb chicken tenders
- 1 tbsp black pepper
- 1 tbsp onion powder
- 3 eggs
- 1/4 C water
- 2 tbsp cornstarch
For the Malted Waffle Batter:
- 1/2 C malt powder
- 2 tbsp sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 2 eggs – beaten
- 4 tbsp melted butter
- 2 C all-purpose flour
- 2 tbsp corn meal
- 1 tsp baking powder
- 1 tbsp cornstarch
- 2 C buttermilk
- 2 tsp vanilla extract
- maple syrup – to serve
The Chew: Chicken & Waffles On A Stick Recipe Directions
- Fill a large, heavy-bottomed pot with a couple inches of oil, then preheat to 360 degrees
- In a mixing bowl, combine the salt and pepper, onion powder, garlic powder, and cayenne pepper
- Combine the chicken tenders and spice mix in a plastic zip-top bag and toss to thoroughly coat the chicken
- Let the coated chicken sit in the bag for 10-15 minutes
- In a shallow dish, lightly beat the eggs, then combine with water and buttermilk
- In a different shallow dish, add corn starch, flour, and salt and pepper
- Dip each piece of chicken in the buttermilk mixture, then coat in flour
- Skewer each dredged chicken tender on top of an 8-inch wooden skewer
- Work in batches to fry the dredges chicken until golden brown, about 7 minutes
- Remove from the skewers to a paper towel-lined plate to cool slightly
- Discard the hot used oil to a cool pot, then replace with a couple inches of clean oil and bring back to 360 degrees
For the Malted Waffle Batter:
- In a large bowl, add malt powder, flour, corn meal, baking powder, sugar, corn starch, baking soda, and salt, then whisk
- Make a well in the middle of the dry ingredients
- Add eggs, buttermilk, butter, and vanilla then whisk together
- Slowly incorporate the dry ingredients to avoid lumps, then let the batter sit for 10-15 minutes
- Dip the cooled, fried chicken skewers into the waffle water, then into the hot oil
- Fry until golden and crispy, about 5 minutes
- Serve the skewers with maple syrup on the side
