Perhaps the best part about brunch is the fact that you can get away with a cocktail! So as you’re devouring a brunch dish like Michael’s Stuffed French Toast, go ahead and treat yourself to a drink! One of Clinton Kelly’s favorite flavor combinations is grapefruit and fennel, so it made perfect sense to combine them in a cocktail. Clinton did so by making a Fennel Simple Syrup, then mixed it with the other tasty ingredients for one refreshing drink!

The Chew: Fennel Grapefruit Delight Cocktail Recipe Ingredients

This Fennel Grapefruit Delight Cocktail is just what you need for a sweet drink during a brunch with friends and family. (patruby / Flickr)
- 1 oz gin
- 4 oz grapefruit juice
- grapefruit slices – to garnish
- 1 oz vodka
- 1 oz fennel simple syrup
- 1/4 C club soda – to finish
- fennel fronds – to garnish
For the Fennel Simple Syrup:
- 1/2 C water
- 1/2 C sugar
- 3 tbsp fennel seeds – toasted
The Chew: Fennel Grapefruit Delight Cocktail Recipe Directions
- In a cocktail shaker, add vodka, ice, fennel simple syrup, gin, and grapefruit juice
- Stir to combine, then strain into a Collins glass filled with ice
- Top with club soda and garnish with grapefruit slice and fennel fronds
For the Fennel Simple Syrup:
- In a small saucepan, add the water, sugar, and fennel seeds
- Bring to a boil and reduce to a simmer
- Cook until the sugar dissolves then remove from the heat and let cool to room temperature
- Let the fennel seeds infuse in the simple syrup for 24-48 hours
- Strain the syrup before making the cocktail and throw away the fennel seeds
