The Chew: Goat Cheese & Almond Endive Cups Recipe Ingredients

Clinton Kelly’s Goat Cheese and Almond Endive Cups are an easy appetizer that will make your guests feel like they’re being served gourmet snacks! (quinnanya / Flickr)
- 1/4 C golden raisins
- 3 tbsp chives – chopped
- 1 log goat cheese – 4 oz, softened
- 3 endives – leaves removed, washed
- 1/3 C marcona almonds – chopped
- 1 tbsp dried currants
- 1/4 C olive oil
- 2 tbsp thyme – leaves only, chopped
- 3 tbsp honey
The Chew: Goat Cheese & Almond Endive Cups Recipe Directions
- In a small bowl, add the almonds, currants, golden raisins, olive oil, chives, kosher salt, and freshly ground black pepper
- In a different small bowl, add thyme and goat cheese, then mix
- On the end of each endive leaf, add a small spoonful of goat cheese
- Add some of the almond mixture to the goat cheese, then drizzle with a little honey
