The Chew: Goat Cheese & Almond Endive Cups Recipe

Clinton Kelly’s Goat Cheese and Almond Endive Cups are an easy appetizer that will make your guests feel like they’re being served gourmet snacks! (quinnanya / Flickr)

  • 1/4 C golden raisins
  • 3 tbsp chives – chopped
  • 1 log goat cheese – 4 oz, softened
  • 3 endives – leaves removed, washed
  • 1/3 C marcona almonds – chopped
  • 1 tbsp dried currants
  • 1/4 C olive oil
  • 2 tbsp thyme – leaves only, chopped
  • 3 tbsp honey

The Chew: Goat Cheese & Almond Endive Cups Recipe Directions

  1. In a small bowl, add the almonds, currants, golden raisins, olive oil, chives, kosher salt, and freshly ground black pepper
  2. In a different small bowl, add thyme and goat cheese, then mix
  3. On the end of each endive leaf, add a small spoonful of goat cheese
  4. Add some of the almond mixture to the goat cheese, then drizzle with a little honey
