Vanessa Bayer from Saturday Night Live joined Michael Symon in the kitchen, saying that she absolutely loves breakfast. As for her favorites, she’s a fan of pancakes and granola, which is why Michael’s recipe was absolutely perfect for her! Together, they made Granola Pancakes with Caramelized Banana Syrup. Of course, because they’re both from Cleveland, they had a blast together talking about their unique accents and passion for talking about the city! The one thing that truly left Vanessa speechless was these pancakes!

The Chew: Granola Pancakes With Caramelized Banana Syrup Recipe Ingredients

- 1 tsp baking powder
- 2 tbsp sugar
- 1 large egg
- 1/2 C milk
- 1 tsp vanilla extract
- 1 C all-purpose flour
- 1/4 tsp baking soda
- 1 pinch salt
- 1/2 C sour cream
- 3 tbsp unsalted butter – melted + more to grease the pan
- 1 recipe Lizzie’s Granola
For the Brown Sugar-Banana Syrup:
- 2 tbsp dark brown sugar
- 1/8 tsp ground cinnamon
- 1 C pure maple syrup
- 4 tbsp unsalted butter
- 2 C bananas – sliced into 3/4-inch thick rounds on a slight bias, about 3-4 bananas
- 1 pinch salt
The Chew: Granola Pancakes With Caramelized Banana Syrup Recipe Directions
- In a large bowl, add the baking powder, flour, sugar, baking soda, and salt, then whisk
- In a second bowl, add the sour cream, egg, melted butter, milk, and vanilla extract, then whisk
- Add wet ingredients to the dry ingredients, then mix fully
- Set aside to let rest for a few minutes
- Put a griddle or nonstick pan over medium heat
- Add some butter to grease the pan
- Pour a few tablespoons of batter a time to make a medium-sized pancake in the pan
- Sprinkle an even layer of granola on each pancake
- Cook until bubble form and begin popping, then flip and cook on the other side until golden
- Remove the pancakes to a plate, and cover loosely with foil to keep warm
- Keep making pancakes until the rest of the batter is used
For the Banana Syrup:
- In a saucepan, melt the butter
- When the butter has melted and begins to foam, add the bananas, cinnamon, brown sugar, and pinch of salt
- Cook, stirring occasionally, until the sugar melts
- Add the maple syrup and simmer for about five minutes, until the bananas soften slightly
- Serve the pancakes warm with a good amount of banana syrup over top
- Finish with more granola if you wish!
