The Chew: Grilled Pina Colada
Clinton Kelly kicked off summer with his Chew co-hosts and his new favorite cocktail. Instead of an ordinary Pina Colada, Clinton had the bright idea to make a Grilled Pina Colada. It’s the same thing as you’re used to seeing, instead he grills the pineapple first! That slight smoky flavor makes it even better than you would imagine! He explained that it’s not exactly a frozen pina colada, but it’s served over ice so it’s still ice-cold! Even a virgin version of this cocktail is delicious so you can serve up this delicious drink at your next party!

The Chew: Grilled Pina Colada Recipe Ingredients

Clinton Kelly’s new favorite cocktail is a Grilled Pina Colada and he showed viewers how to make it just in time for summer! (djrue / Flickr)
For the Blended Pineapple:
- 1 pineapple – cut into spears (save some as garnish)
For the Pina Colada:
- 2 oz white rum
- 1 oz lime juice
- lime wedges – as garnish
- 2 tbsp blended pineapple
- 2 oz cream of coconut
- maraschino cherry – as garnish
- crushed ice – to serve
The Chew: Grilled Pina Colada Recipe
For the Blended Pineapple:
- Preheat a grill or grill pan to medium-high heat
- Put a pineapple on the grill and let char for about 3 minutes per side
- Remove to a plate and let cool completely
- Put the cooled pineapple in the bowl of a food processor and puree until smooth
- Remove to a bowl and set aside
For the Pina Colada:
- In a cocktail shaker filled with ice, add the blended pineapple, cream of coconut, rum, and lime juice
- Shake to combine
- Strain over glasses filled with crushed ice
- Garnish with lime wedge, cherry, and a pineapple spear
