The Chew: Grilled Veal Parmesan
The hosts of The Chew were having the time of their lives in Disney World in Orlando, Florida for the International Food and Wine Festival. After kicking off the week with a nighttime taping of the show, they were thrilled to be in front of a full daytime audience! Michael Symon first had a tasty Fall Grilled Cheese recipe to share with everyone, which would certainly make for a great lunch. But what about dinner? Don’t worry, Mario Batali’s got you covered! His Grilled Veal Parmesan recipe is surprisingly simple to put together, but tastes like it should be served at a gourmet restaurant! Plus, unlike the traditional version which is fried, Mario decided to grill the veal which means you don’t have to feel super guilty about devouring it!

The Chew: Grilled Veal Parmesan Recipe Ingredients

Mario Batali’s Grilled Veal Parmesan recipe is a slightly lighter version of the traditional fried dish, which means all the flavor without the guilt! (diettogopics / Flickr)
- 2 tbsp olive oil
- 1 ball fresh mozzarella – sliced thin
- 1/2 C basil – to garnish
- 4 veal cutlets – pounded 1/4-inch thick
- 1 C marinara sauce
- 1/2 C Parmigiano-Reggiano – grated, to garnish
- kosher salt and freshly ground black pepper
The Chew: Grilled Veal Parmesan Recipe Directions
- Preheat a grill or grill pan over medium-high heat
- Preheat the broiler
- Season the veal cutlets on both sides with salt and pepper
- Add a drizzle of olive oil to the veal, then place on the grill
- Let cook until charred and cooked through, about 3-4 minutes on each side
- Remove the cutlets to a baking sheet
- Add the marinara sauce over top the cutlets, then top with a slice of mozzarella cheese
- Put under the broiler for about 2 minutes and let the cheese melt
- Remove and garnish with Parmigiano-Reggiano and fresh basil
