The Chew: Marinated Peach & Burrata Salad
Actor Adam Brody has come a long way since his days on The O.C. The star of The StartUp joined The Chew to talk about his much more serious role in the dramatic TV show, while sharing his love of delicious food. Michael Symon had a ball chatting with Adam, while they worked together to prepare a dish with the perfect balance of sweet and savory flavors. They put together a Marinated Peach and Burrata Salad to prove just how delicious grilled fruit is. Michael explained that while fruit is already sweet enough on its own, when you grill something like a peach, the caramelization brings out even more of the natural, sweet flavor!

The Chew: Marinated Peach & Burrata Salad Recipe Ingredients

Actor Adam Brody helped prepare a delicious and fresh Marinated Peach and Burrata Salad worthy of the only the luckiest diners! (mccun934 / Flickr)
- 1 small red onion – halved, sliced 1/4-inch thick
- kosher salt and freshly ground black pepper
- 2 peaches – pitted, cut into wedges
- 2 tbsp olive oil
For the Vinaigrette:
- 1 tbsp Dijon mustard
- 1/2 C olive oil
- 3 tbsp champagne vinegar
- 1 tbsp honey
- kosher salt and freshly ground black pepper
To Assemble:
- 1/3 C mint – torn into small pieces
- 6 oz Burrata cheese
- 1 baguette – cut into 1/2-inch slices
The Chew: Marinated Peach & Burrata Salad Recipe Directions
- Preheat a grill or grill pan to medium-high heat
For the Peaches:
- In a small bowl, add the peaches and red onion, then drizzle with olive oil
- Season with salt and pepper
- Put the peach mixture on the grill and char on all sides, approximately 3-5 minutes
- Remove from the grill
For the Vinaigrette:
- In a small bowl, add the champagne vinegar, honey, and Dijon mustard
- Whisk to combine, then slowly pour in 1/4 C olive oil and whisk again
- Season with salt and pepper
To Assemble:
- Preheat a grill or grill pan to medium heat
- Brush the baguette slices on both sides with olive oil
- Put the slices on the grill until charred, approximately 2-3 minutes per side
- Put the burrata on a serving platter
- Add the torn mint to the peach mixture
- Spoon the peach mixture over the burrata
- Drizzle the vinaigrette over top
- Serve with the grilled baguette
