The Chew: Shaved Zucchini Salad Recipe Ingredients

Daphne Oz’s Shaved Zucchini Salad is a fresh and flavorful way to use a cheap end-of-summer farmer’s market find. (stone-soup / Flickr)
- 2 tsp honey
- 1/2 tsp red pepper flakes
- 1/4 C basil – roughly torn, to garnish
- Kosher salt and freshly ground black pepper
- 2 tbsp olive oil
- 1 lemon – juiced
- 3 medium zucchini – shaved thin on a mandolin
- Ricotta Salata – grated, to serve on top
The Chew: Shaved Zucchini Salad Recipe Directions
- In a large bowl, add honey, olive oil, red pepper flakes, and lemon juice, then whisk
- Add the zucchini and toss lightly
- Season with salt and pepper
- Garnish with Ricotta Salata and basil
- Serve
