The actress, author, and cancer activist was full of energy as she helped Clinton prepare a delicious pasta dish. Together, they prepared a classic combination with a twist! This Spaghetti and Chicken Meatballs recipe is a little lighter than the traditional version, but has just as much flavor! For an easy, homemade weeknight meal, this is the perfect recipe!

The Chew: Spaghetti With Chicken Meatballs Recipe

For the Meatballs:

  • 1 C ricotta cheese – drained
  • 1/4 C parmesan cheese – grated
  • 1 tbsp oregano leaves – chopped
  • 1/2 tsp red pepper flakes
  • 1 C milk
  • 1 lb ground chicken – dark meat
  • 1 large egg – whisked
  • 1 clove garlic – peeled, grated
  • 1 tbsp thyme leaves – chopped
  • 2 C stale bread – cubed
  • kosher salt and freshly ground black pepper

For the Tomato Sauce:

  • 1 small yellow onion – peeled, chopped
  • 2 lbs roma tomatoes – finely chopped
  • 1 sprig thyme
  • kosher salt and freshly ground black pepper
  • 2 tbsp olive oil
  • 2 cloves garlic – peeled, sliced thin
  • 2 sprigs oregano
  • 1 lb spaghetti

To Serve:

  • basil – to garnish
  • ricotta – to garnish
  • parmesan cheese – grated, to garnish

  1. Preheat the oven to 400 degrees
  2. In a large bowl, add the ricotta, chicken, parmesan, egg, oregano, garlic, thyne, and red pepper flakes, thn mix
  3. Season with salt and pepper
  4. In a small bowl, soak the bread in the milk until bread becomes soggy
  5. Remove the bread from the milk, squeezing to remove any excess, then add to the meatball mixture
  6. Scoop 1 1/2-inch meatballs onto a parchment-lined baking sheet using a 2 tbsp cookie scoop
  7. Bake until golden, about 15 minutes

For the Tomato Sauce:

  1. In a saucepan over medium heat, add onions, olive oil, and garlic
  2. Season with salt and pepper and cook until fragrant
  3. Add oregano, tomatoes, and thyme
  4. Simmer for about 10 minutes
  5. Cook the pasta according to package instructions then save the pasta water to loosen the sauce

To Serve:

  1. Serve the spaghetti with the sauce
  2. Top with chicken meatballs
  3. Add a dollop of ricotta cheese, parmesan cheese, and basil
