The Chew: Upside-Down Apple Cake Recipe Ingredients

For the Wine-Glazed Apples:
- 1/4 C light brown sugar
- 3 Honeycrisp apples – peeled, cored, cut into 1/2-inch 1/2 moons
- 1/4 C ruby port wine
- 6 tbsp unsalted butter
- 1 cinnamon stick
- 1/2 tsp salt
For the Cake:
- 1 tbsp baking powder
- 1 tsp salt
- 1 C light brown sugar
- 1 C sour cream
- 2 tsp vanilla extract
- powdered sugar – for dusting
- 1 1/2 C all-purpose flour
- 1/2 tsp ground cinnamon
- 1/2 C unsalted butter – at room temperature
- 2 large eggs – at room temperature
- 1/3 C Greek yogurt
- whipped cream – to serve
The Chew: Upside-Down Apple Cake Recipe Directions
For the Wine Glazed Apples:
- In a large saute pan over medium-high heat, add the butter and sugar
- When the sugar starts bubbling, after about 3-5 minutes, add the apples and cinnamon stick
- Cook for another 2-3 minutes then add the port
- Reduce for about 5-7 minutes, then remove from the heat
- Arrange the apple slices in a circle in the pan, leaving some room between them to let some of the caramel peek through
- Pour the glazed apples into the prepared 9-inch cake pan
For the Cake:
- Preheat the oven to 350 degrees
- Grease a 9-inch cake pan lightly with butter
- In a large bowl, add the cinnamon, baking powder, flour, and salt, then whisk until combined
- In the bowl of a stand mixer fitted with a paddle attachment, add the sugar and butter and mix until light and fluffy, about 4 minutes
- Add one egg at a time, mixing thoroughly between additions
- Add vanilla extract and mix
- In a medium bowl, whisk the sour cream and Greek yogurt, then set aside
- Starting and ending with the dry mix, start to slowly add the flour mixture, then the sour cream mixture, alternating
- Mix until just combined, then set aside
- Pour the cake batter over the apples
- Bake for 35-40 minutes, then remove from the oven and let cool for 10 minutes
- Carefully invert the cake onto a serving platter
- Serve with whipped cream and a dusting of powdered sugar
