Today Show: Hoda Kotb Kofta Burgers with Cucumber and Cumin Yogurt Relish Recipe Ingredients

Today Show’s Hoda Kotb shared a family favorite recipe for Kofta Burgers, which are finished off with a tasty Cucumber and Cumin Yogurt Relish. (skewgee / flickr)
- 1 lb Ground Beef
- 1 minced clove Garlic
- 2 tsp fine chopped Mint leaves
- 1/2 tsp Cayenne Pepper
- 4 Burger Buns
- 1/4 cup minced White Onion
- 2 tbsp fine chopped Italian Parsley leaves
- 1 tsp Kosher Salt
- 1/2 tsp Black Pepper
Cucumber & Cumin Yogurt Relish Ingredients
- 6 peeled, halved, seeded Kirby Cucumbers
- 1/4 cup Greek Yogurt (or use Sour Cream)
- 2 tbsp fine chopped Italian Parsley leaves
- 2 tsp granulated Sugar
- 1/2 tsp ground Cumin
- 2 tbsp White Wine Vinegar
- 2 tsp fine chopped Mint leaves
- 1 tsp crushed whole Coriander seed
- 1/4 tsp ground Cayenne Pepper
- 1 1/2 tsp Kosher Salt
Hoda Kotb: Today Show Kofta Burgers Recipe with Cucumber and Cumin Yogurt Relish Directions
- Combine all the burger ingredients (except bread) in a mixing bowl until well mixed.
- Use your hand to score the meat into four equal portions and form them into patties, thinner at the centers and thicker at the edges.
- Heat a grill pan on medium. Once it’s hot, cook the burgers for about 10 minutes per side.
- Serve the burgers on buns, topped with relish.
Relish Directions
- Cut the cucumbers into a small dice. Place them in a colander over another bowl.
- Sprinkle 1 tsp salt over the cucumbers and toss well. Weight the cucumbers down with a plate and let them drain for about 10 minutes. Press down on the plate now and then to squeeze out more water.
- Combine yogurt with parsley, sugar, cumin, vinegar, mint, coriander, and cayenne. Add 1/2 tsp salt and mix everything well.
- Use paper towels to blot excess moisture from the cucumbers.
- Add cucumbers to the yogurt mix. Stir well and adjust seasonings to taste before serving.
