Rachael Ray: Cauliflower & Sweet Potato Side Dishes

Mashed Cauliflower cooks using steam, which saves you time because you don’t have to break it down first. I like any process that is going to save me prep time in the kitchen.
Sweet Potatoes are nutrient-rich, and mashing them is a great way to add more color to any plate. Look for Orange Marmalade with no added sugar to help naturally sweeten them.
Rachael Ray: Bacon-Wrapped Chicken with Herbs Recipe Ingredients
- 1 skinned Chicken, cut into eight pieces (wings reserved for future use)
- 1 fine chopped Fresno Chili Pepper
- 2 tbsp fine chopped Thyme
- 4 cloves minced Garlic
- 2 tbsp fine chopped Rosemary
- 6 Bay leaves
- 6 thin slices Bacon
- 1/4 cup Extra Virgin Olive Oil
- Salt & Pepper
Mashed Sweet Potatoes Ingredients
- 4 peeled Sweet Potatoes (cut in 2” chunks)
- 3 tbsp Polaner Orange Marmalade
- 1 tbsp chopped Thyme
- 1/4 tsp ground Cinnamon
- 1/2 cup Chicken Stock
- grated Nutmeg
- 1 or 2 tbsp Butter
- Salt & Pepper
Cheesy Cauliflower Ingredients
- 1 trimmed, stemmed head Cauliflower
- 1 5.4-oz package Boursin Garlic Herb Cheese
- 1 cup Chicken Stock
- 1/2 cup grated Parmigiano-Reggiano Cheese
- Extra Virgin Olive Oil
- Salt & Pepper
Rachael Ray: Bacon-Wrapped Chicken with Herbs Recipe Directions
- Preheat the oven at 375 F and set a wire rack inside a rimmed baking sheet.
- Arrange chicken with rosemary, thyme, garlic, and chilis in a baking dish.
- Toss chicken ingredients with olive oil, salt and pepper. (Optionally, stop here and let this marinate overnight in the fridge.)
- Put a bay leaf on each piece of chicken. Wrap a bacon slice on each chicken piece, letting the bay leaf peek out.
- Place chicken on the wire rack and bake about 45 minutes, until bacon is crispy and chicken has fully cooked. Serve with mashed sweet potatoes and/or cauliflower.
Mashed Sweet Potatoes Directions
- Cover sweet potatoes with cold water in a pot.
- Bring to a boil and add salt; cook potatoes until they are tender.
- Drain potatoes and place them back in the pot; salt and pepper.
- Mash the potatoes with marmalade, thyme, cinnamon, chicken stock, nutmeg, and butter.
Cheesy Cauliflower Directions
- In a Dutch oven, place cauliflower with chicken stock.
- Add olive oil, salt and pepper; bring to a boil.
- Cover and simmer until cauliflower is tender.
- Mash with Boursin and Parmigiano cheeses. Adjust seasonings to serve.
