Fitness expert Bob Harper knows that in order to stick to a healthy-eating plan, you have to find food that not only tastes good, but keeps you full. He kicked things off by showing viewers how to make delicious protein-packed snacks. His Cinnamon Raisin Peanut Butter Protein Bars were an absolute hit, so he then wanted to share another snack recipe loaded with protein. His Pumpkin Pie Protein Bites prove just how creative Bob can be in the kitchen. You can make some simple swaps to fit this recipe to your liking, but made just as is, these are some tasty bites!

Rachael Ray: Bob Harper Pumpkin Pie Protein Bites Recipe

  • 1/4 C pepitas (raw pumpkin seeds)
  • 1/3 C canned pumpkin puree
  • 2 tsp pumpkin pie spice
  • pinch of salt
  • 1/2 C pecans
  • 1 C Medjool dates – pitted, soaked in water for 10 minutes
  • 1/4 C unsweetened coconut flakes or finely ground coconut + more for coating
  • 1/4 C egg-white protein powder

Bob Harper: Rachael Ray Pumpkin Pie Protein Bites Recipe Directions

  1. Add pepitas and pecans to the bowl of a food processor
  2. Pulse until ground, then add the pumpkin puree, soaked dates, protein powder, pumpkin pie spice, and salt
  3. Pulse until the mixture comes together
  4. Use a spatula to remove the mixture and put into a bowl
  5. Chill the mixture for 20-25 minutes
  6. Use a 1-inch scoop to scoop the mixture into a plate of coconut flakes
  7. Roll the protein bites in the coconut flakes until covered, then serve
