He kicked things off by showing viewers how to make delicious protein-packed snacks. - 1/4 C pepitas (raw pumpkin seeds)
- 1/3 C canned pumpkin puree
- 2 tsp pumpkin pie spice
- pinch of salt
- 1/2 C pecans
- 1 C Medjool dates – pitted, soaked in water for 10 minutes
- 1/4 C unsweetened coconut flakes or finely ground coconut + more for coating
- 1/4 C egg-white protein powder

- Add pepitas and pecans to the bowl of a food processor
- Pulse until ground, then add the pumpkin puree, soaked dates, protein powder, pumpkin pie spice, and salt
- Pulse until the mixture comes together
- Use a spatula to remove the mixture and put into a bowl
- Chill the mixture for 20-25 minutes
- Use a 1-inch scoop to scoop the mixture into a plate of coconut flakes
- Roll the protein bites in the coconut flakes until covered, then serve
