Rachael Ray: Curtis Stone Broccolini-Mushroom Casserole

Curtis Stone was sharing a few fantastic Thanksgiving side dish recipes, combining two different ones to make one dish. Because mushroom soup is such a hit, as is broccoli casserole, why not combine the two using broccolini to make a beautiul and flavorful casserole? You’ll wish you always made your own mushroom soup rather than using the canned soup!

Rachael Ray: Broccolini Mushroom Casserole Recipe

Curtis Stone shared a recipe for Broccolini Mushroom Casserole with homemade mushroom soup that tastes so much better than what comes from a can! (jeffreyww / Flickr)

  • 12 oz white mushrooms – sliced thick
  • 2 garlic cloves – finely chopped
  • 1/4 C dry white wine
  • 2 C whole milk
  • 1 C finely grated Parmesan cheese – divided
  • 1/2 C panko (Japanese dried breadcrumbs)
  • 2 1/2 tbsp olive oil – divided
  • 1/2 C finely chopped shallots
  • 2 tsp chopped fresh thyme
  • 1 1/2 tbsp all-purpose flour
  • 1/2 C heavy cream
  • 2 bunches broccolini – trimmed, blanched for 30 seconds

Curtis Stone: Rachael Ray Broccolini-Mushroom Casserole Recipe Directions

  1. Preheat the broiler
  2. Heat a large nonstick skillet over medium-high heat
  3. Add 1 1/2 tbsp of oil and the mushrooms, then saute for about 6 minutes, until mushrooms are tender
  4. Add the shallots, thyme, and garlic, then saute for 3 minutes until the shallots start to soften
  5. Add the wine and simmer for about 20 seconds
  6. Sprinkle the flour over the mushrooms and stir to blend
  7. Stir in the milk and cream, then bring to a boil, then reduce to medium and simmer gently, stirring, for about 3 minutes
  8. Stir in 1/4 C of the cheese and remove from the heat
  9. Season to taste with salt and pepper
  10. Toss the broccolini in the hot mushroom mixture
  11. Transfer the mixture to a 9-inch square baking or oval gratin dish
  12. In a medium bowl, mix the panko, remaining 3/4 C cheese, and the last tbsp of oil, tossing well
  13. Sprinkle the mixture over the top of the casserole
  14. Broil, uncovered, watching carefully, for 2-3 minutes or until the bread crumb mixture is golden brown
