Rachael Ray: Curtis Stone Broccolini-Mushroom Casserole

Curtis Stone shared a recipe for Broccolini Mushroom Casserole with homemade mushroom soup that tastes so much better than what comes from a can! (jeffreyww / Flickr)
- 12 oz white mushrooms – sliced thick
- 2 garlic cloves – finely chopped
- 1/4 C dry white wine
- 2 C whole milk
- 1 C finely grated Parmesan cheese – divided
- 1/2 C panko (Japanese dried breadcrumbs)
- 2 1/2 tbsp olive oil – divided
- 1/2 C finely chopped shallots
- 2 tsp chopped fresh thyme
- 1 1/2 tbsp all-purpose flour
- 1/2 C heavy cream
- 2 bunches broccolini – trimmed, blanched for 30 seconds
Curtis Stone: Rachael Ray Broccolini-Mushroom Casserole Recipe Directions
- Preheat the broiler
- Heat a large nonstick skillet over medium-high heat
- Add 1 1/2 tbsp of oil and the mushrooms, then saute for about 6 minutes, until mushrooms are tender
- Add the shallots, thyme, and garlic, then saute for 3 minutes until the shallots start to soften
- Add the wine and simmer for about 20 seconds
- Sprinkle the flour over the mushrooms and stir to blend
- Stir in the milk and cream, then bring to a boil, then reduce to medium and simmer gently, stirring, for about 3 minutes
- Stir in 1/4 C of the cheese and remove from the heat
- Season to taste with salt and pepper
- Toss the broccolini in the hot mushroom mixture
- Transfer the mixture to a 9-inch square baking or oval gratin dish
- In a medium bowl, mix the panko, remaining 3/4 C cheese, and the last tbsp of oil, tossing well
- Sprinkle the mixture over the top of the casserole
- Broil, uncovered, watching carefully, for 2-3 minutes or until the bread crumb mixture is golden brown
