Rachael Ray: Brownie Ice Cream Cake

Grant Melton has proved himself, not only as the perfect sidekick for Rachael Ray, but as the king of sweet treats. Grant isn’t afraid to think outside of the box, literally! He transformed boxed brownie mix into his Brownie Ice Cream Cake. He surprised Rachael by showing her what looked like an ordinary cake, only to slice into it to reveal layers of dark chocolate brownie and Cookies ‘n Cream ice cream! As if that wasn’t enough, he then iced the entire cake with light and flavorful homemade whipped cream! This dessert is definitely a winner!

Rachael Ray: Brownie Ice Cream Cake Recipe

Grant Melton was back with yet another luxuriously delicious dessert! His Brownie Ice Cream Cake is an easy go-to sweet! (vegan_baking / Flickr)

  • 3 eggs
  • 1/4 C water
  • 1 pint heavy whipping cream
  • 1/2 tsp salt
  • 1 box dark chocolate brownie mix
  • 1/2 C oil
  • 2 pints Cookies ‘n Cream ice cream – softened lightly
  • 1 C confectioners’ sugar

Rachael Ray: Brownie Ice Cream Cake Recipe Directions

  1. Preheat the oven to 350 degrees
  2. Put the brownie mix into a medium-size bowl
  3. Add oil, eggs, and water
  4. Use a hand mixer to mix until combined
  5. Spray two 10-inch cake pans with nonstick cooking spray, then pour the batter into the pans
  6. Put into the oven and bake for 20 minutes
  7. Let cool, then once they’re cooled, turn one of the brownie cakes onto a plate
  8. Scoop the softened ice cream onto the brownie, evenly distributing the ice cream into a single layer
  9. Place the other brownie cake on top and press lightly
  10. Put into the freezer for a few hours to set

For the Whipped Cream:

  1. Put the cream into the bowl of a stand mixer
  2. Whisk until peaks start to form
  3. Add in the salt and powdered sugar

To Finish:

  1. Remove the ice cream cake from the freezer and frost with the whipped cream
  2. Put back into the freezer to set
  3. Remove from the freezer 10 minutes before serving
