Rachael Ray isn’t afraid to take things too far. For example, would you ever think to combine pasta and a burger? Only if it meant crumbling the meat into a pasta dish, right? Well Rachael literally put pasta into her burger patties to make her incredible and unique Carbonara Burgers. Oh and did I mention she topped the burger patties with a fried egg? Chef Curtis Stone was with Rachael in the kitchen as she prepared the burgers, and even he couldn’t deny that, no matter how crazy the recipe sounded, these burgers were an absolute success!

Rachael Ray: Carbonara Burgers Recipe

Rachael Ray’s Carbonara Burger was practically a mash-up made in heaven and even Curtis Stone was thrilled with the recipe! (emiemihuimei / Flickr)

  • 1/4 lb meaty pancetta – finely chopped
  • 4 cloves garlic – chopped
  • 1 1/2 lbs ground sirloin
  • a small handful flat-leaf parsley – finely chopped
  • olive oil – for drizzling
  • 4 eggs
  • 1 C giardiniera – drained, finely chopped in a food processor into relish
  • 2 tbsp olive oil + more for drizzling
  • 1 tsp coarse black pepper
  • 1 1/2 C loosely packed leftover cooked bucatini pasta – chopped
  • salt
  • 1/4 C each grated Parm and grated Pecorino cheese
  • 1 tbsp butter
  • 4 Brioche burger rolls – split, toasted or sandwich-size English muffins – toasted
  • gem leaf lettuce

Rachael Ray: Carbonara Burgers Recipe Directions

  1. Heat olive oil over medium-high heat in a medium-size skillet
  2. Add the pancetta and lightly brown and render for about 2-3 minutes
  3. Add the pepper and garlic, then stir
  4. Add the chopped pasta and brown lightly
  5. Remove from the heat and cool completely
  6. Combine the pasta mixture, beef, cheese, and parsley
  7. Shape 4 patties and drizzle with olive oil
  8. Heat a large cast-iron skillet over medium-high heat with a couple drizzles of olive oil
  9. Add burgers and cook for 8-10 minutes, turning occasionally, then remove to a plate
  10. Reduce the heat and add butter to the pan
  11. Cook four eggs to over-easy
  12. Spread some of the relish on the roll bottoms, then top with lettuce, a burger, an egg, and the roll tops
