The always enthusiastic and bubbly Clinton Kelly joined Rachael Ray to share some of his favorite summer treats. He showed viewers how to put together his Ginger Lime Rickey, a refreshing and fruity cocktail that’s nearly impossible not to love! He created a Ginger Simple Syrup using fresh ginger, which comes together easily and really enhances the flavor of this drink. He then combined the simple syrup with homemade red, white, and blue ice cubes, which makes for a cocktail perfect for the 4th of July! How fun is that?

Clinton Kelly’s Ginger Lime Rickey uses homemade red, white and blue ice cubes to make for a beautiful and delicious drink! (thedelicious / Flickr)
For the Ginger Simple Syrup:
- 1 C sugar
- 1 C water
- 1/2 C fresh ginger – peeled, sliced
- club soda
- blueberry ice cubes (directions on next page)
- 3/4 oz lime juice
- cranberry ice cubes (directions on next page)
Clinton Kelly: Rachael Ray Ginger Lime Rickey Recipe Directions
For the Cranberry Ice Cubes:
- Fill an ice cub tray with cranberry juice
- Freeze overnight
For the Blueberry Ice Cubes:
- Add 6-8 blueberries to each cube of an ice tray
- Fill with water to cover the blueberries
- Freeze overnight
For the Simple Syrup:
- In a saucepan over high heat, add 1 C sugar, 1 C water, and 1/2 C peeled, sliced fresh ginger
- Stir until the sugar is completely dissolved
- Drop the heat to low and steep for 30 minutes
- Strain
For the Cocktail:
- Add lime juice and an ounce of the Ginger Simple Syrup to a tall glass, then stir
- Fill with the homemade ice cubes
- Top with club soda
- Stir carefully to mix
- Serve, sip and enjoy
