Rachael Ray: Curtis Stone Oatmeal Coconut Butter Cookies Recipe Ingredients

- 3/4 C unsweetened shredded coconut
- 1 C sugar
- 3 tbsp golden syrup (Lyle’s brand, if possible)
- 1 1/2 tsp baking soda
- 1 C old-fashioned (rolled) oats
- 1 C all-purpose flour
- 12 tbsp (1 1/2 sticks) unsalted butter
- 2 tbsp boiling water
Curtis Stone: Rachael Ray Oatmeal Coconut Butter Cookies Recipe Directions
- Position the racks in the top third and center of the oven, then preheat to 300 degrees
- Line two large, heavy, rimmed baking sheets with parchment paper
- In a large bowl, mix the coconut, oats, sugar, and flour
- In a medium heavy saucepan, stir the butter and syrup over low heat until the butter is melted
- Remove the saucepan from the heat
- In a small bowl, combine baking soda and water, then stir into the melted butter
- Stir the baking soda-butter mixture into the flour mixture
- Use 1 tbsp dough for each cookie and make 12 balls of dough on each baking sheet, spacing evenly and avoiding overcrowding
- Bake the cookies, switching the sheets from top to bottom and front to back halfway through baking, for about 15 minutes, until golden brown
- Let cool on the baking sheet for 5 minutes
- Transfer the cookies to wire racks then let cool completely
- The cookies will become a little crispy and chewy once they’ve cooled
- Repeat with the rest of the dough, but make sure th baking sheets are cooled completely before adding more dough
