Graham Elliot, who just lost 150 pounds himself, joined Rachael Ray to share his healthier side dish recipe for Thanksgiving. It would be nice to still be able to button your pants at the end of the day right? It’s all about enjoying delicious food while making healthier choices, and Graham Elliot makes that easy! He kicked off the segment with his Healthy Mashed Potato Fake-Out that, surprisingly, doesn’t contain potatoes!

Rachael Ray: Graham Elliot Healthy Mashed Potato Fake-Out

Having just lost 150 pounds himself, Graham Elliot knows how to make good food that’s also good for you, like his Mashed Potato Fake-Out! (plasticrevolver / Flickr)

  • 1 Spanish onion – diced
  • pinch of saffron
  • 3 C vegetable or chicken stock
  • leaves from 4 sprigs fresh oregano
  • 1/4 C olive oil + more for drizzling
  • 4 garlic cloves – minced
  • 3 C cooked cannellini beans
  • salt and freshly ground black pepper

Rachael Ray: Graham Elliot Healthy Mashed Potato Fake-Out Recipe Directions

  1. In a saucepan or small pot, heat the oil over medium-high heat
  2. When hot, saute the onion and garlic for 3-5 minutes or until translucent
  3. Remove the pan from the heat and add the saffron
  4. Let it infuse the oil mixture for about 5 minutes
  5. Add the beans and return the pan to the heat
  6. Add the broth and bring to a boil
  7. Reduce the heat and simmer for about 20 minutes or until reduced by half
  8. Remove from the heat and mash the beans until desired consistency, smooth or lumpy (to make it really smooth, use a food processor)
  9. Season with salt and pepper
  10. Serve drizzled with olive oil and topped with oregano
