- 1 pomegranate – seeded
- 2 1/2 tbsp red wine vinegar
- 1 tsp honey
- 1/4 C shaved Parm
- 3 heads broccoli separated into medium florets and shaved stems – use a peeler to shave the stem
- 1/4 C slivered almonds – toasted
- 1 1/2 tsp smooth Dijon mustard
- 1/2 C olive oil

- In a large bowl, toss broccoli, pomegranate seeds, and almonds
- In a small bowl, whisk together vinegar, honey, mustard, and a pinch of salt and pepper
- While whisking, slowly pour in the olive oil
- Once combined, pour over the broccoli and toss, then top with shaved parmesan
