After sharing her recipe for Taquitos, Gwyneth wanted to share another recipe that’s perfect for Cinco de Mayo or any time of the year when you’re craving a Mexican dish. She shared another recipe from her book: her Chicken Enchiladas. This is another easy recipe that can be put together in no time, making enough to feed your entire family. Rachael Ray: Gwyneth Paltrow Chicken Enchiladas Recipe Ingredients

Gwyneth Paltrow shared a recipe from her new cookbook for Enchiladas that come together in no time! (personalcreations / Flickr)
- olive oil or cooking spray
For the Sauce:
- 1/2 C packed roughly chopped fresh cilantro
- 3 tbsp olive oil
- 1/2 tsp chili powder
- 3/4 tsp salt
- 2 chipotles in adobo + 4 tbsp adobo sauce from the sauce
- 1 medium yellow onion – roughly chopped
- 3 large cloves garlic – smashed
- 1/2 tsp ground coriander
- 1 tsp ground cumin
- 1 28-oz can diced tomatoes with juice
For the Enchiladas:
- 1 tsp Mexican oregano
- 1 C shredded cheese (Cheddar, Mexican blend, or mozzarella)
- salt
- 4 C shredded chicken (from 1 rotisserie chicken)
- 1/2 small white onion – sliced very thin
- 1 C crumbled queso fresco
- 8 spelt or flour tortillas
