Rachael Ray: Gwyneth Paltrow’s Taquitos
Rachael Ray was pleased to welcome Gwyneth Paltrow back to her show. Since her last visit, Gwyneth published her third book “It’s All Easy.” She wanted to share a recipe from the book, her Taquitos! This dish a great kid-friendly dinner recipe, and can be made two ways. Because Gwyneth’s daughter is a vegetarian, she makes black bean taquitos for her and then chicken taquitos for her son. But she uses rotisserie chicken, which means you don’t have to cook any of the filling! This is an easy and delicious recipe you can make just in time for Cinco de Mayo!

Rachael Ray: Gwyneth Paltrow Taquitos Recipe Ingredients

Gwyneth Paltrow shared her recipe for Taquitos, that she likes to make her for kids, either with black beans or chicken. (ozten / Flickr)
For the Chicken Version:
- 1 C shreddred Mexican cheese blend
- 1/2 tsp ground cumin
- salt
- 1 1/2 C finely chopped cooked chicken (about 1/4-inch pieces)
- 1 tbsp finely chopped fresh cilantro
- 3 tbsp finely diced white onion
For the Black Bean Version:
- 1 C Mexican shredded cheese blend
- 1/2 tsp ground cumin
- salt
- 1 14-oz can black beans – drained, rinsed
- 2 tbsp finely chopped fresh cilantro
- 2 tbsp finely diced white onion
For the Taquitos:
- olive oil or another neutral oil – for frying
- fresh salsa, guacamole, and/or hot sauce – to serve
- cooking spray
- 12 corn tortillas for the chicken version of 8 corn tortillas for the black bean version
Gwyneth Paltrow: Rachael Ray Taquitos Recipe Directions
- Preheat the oven to 400 degrees
- Lightly grease a baking sheet with cooking spray
For the Chicken Version:
- Mix the cheese, chicken, onion, cumin, and cilantro in a large bowl, then season with salt
For the Black Bean Version:
- Mix the cheese, black beans, onion, cumin, and cilantro in a large bowl, then season with salt
For the Taquitos:
- In a small saute pan, heat about 1 tbsp of oil over medium-high heat
- Quickly fry 1 tortilla for about 30 seconds on each side
- Fill the tortilla with about 3 tbsp of the filling of your choice, then carefully roll up
- Put the rolled, filled tortilla seam side-down on the prepared baking sheet
- Continue with the rest of the filling and tortillas, then bake them in the oven for 20 minutes
- Serve with hot sauce, salsas, and/or guacamole
