Her Cucumber Salad is super simple and exactly what you need to serve alongside your summer favorites. She explained that although it seems like this salad has a lot of onion, the way it’s prepared, especially with the dressing, ensures that you’re not hit with overwhelming onion flavor. Rachael Ray: Hope Cohen Cucumber Salad Recipe

  • 1/4 red onion – peeled, sliced very thin, rinsed in cold water, drained
  • 3 tbsp finely chopped fresh mint leaves
  • 1/4 C white wine vinegar
  • 1 1/2 tbsp vegetable oil
  • 4 large cucumbers – peeled, seeded, sliced
  • 3 tbsp finely chopped fresh dill
  • 1 tsp sea salt
  • 2 tsp sugar

Hope Cohen: Rachael Ray Cucumber Salad Recipe Directions

  1. In a large bowl, combine all the ingredients
  2. Mix thoroughly then store in the fridge for at least 30 minutes or up to 24 hours (4-6 hours is recommended)
  3. Adjust the seasoning as needed
  4. Serve cold
