Rachael Ray: Hope Cohen Cucumber Salad Recipe Ingredients

- 1/4 red onion – peeled, sliced very thin, rinsed in cold water, drained
- 3 tbsp finely chopped fresh mint leaves
- 1/4 C white wine vinegar
- 1 1/2 tbsp vegetable oil
- 4 large cucumbers – peeled, seeded, sliced
- 3 tbsp finely chopped fresh dill
- 1 tsp sea salt
- 2 tsp sugar

- In a large bowl, combine all the ingredients
- Mix thoroughly then store in the fridge for at least 30 minutes or up to 24 hours (4-6 hours is recommended)
- Adjust the seasoning as needed
- Serve cold
