Rachael Ray: John McLemore Loaded Baked Potato Bites
John McLemore was celebrating a Deep Fried Thanksgiving with Rachael Ray, bringing out the deep fryer to cook a lot more than just turkey. He rolled all the flavors of a loaded baked potato into a ball before deep frying it into gooey, starchy, fried deliciousness. Again, these aren’t exactly figure-friendly, but practice moderation and enjoy yourself some deep-fried Thanksgiving treats!

Rachael Ray: John McLemore Loaded Baked Potato Bites Recipe Ingredients

These Loaded Baked Potato Bites are almost good enough to eat right out of the mixing bowl, but just wait until they come out of the fryer then you’ll really be in heaven! (rjw1 / Flickr)
- 1 gallon cooking oil
- 1 packet Ranch seasoning
- 1 tbsp chopped fresh chives
- 1 C all-purpose flour
- 2 eggs – lightly beaten
- sour cream and chives (optional)
- 1 lb baking potatoes (about 2 large)
- 1 1/4 C shredded sharp Cheddar cheese
- 4 slices bacon – cooked, crumbled
- 1 tsp kosher salt
- 1 tsp baking powder
- 1/2 C milk
John McLemore: Rachael Ray Loaded Baked Potato Bites Recipe Directions
- Preheat oven to 400 degrees
- Put potatoes directly on an oven rack and bake for 1 hour or until tender
- Let cool slightly and mash (leave the skin on or remove, your choice!)
- Fill the deep fryer halfway with oil and heat to 350 degrees
- In a large bowl, combine potatoes, cheese, bacon, ranch seasoning, salt, and chives
- Shape into 1 1/2-inch balls
- In a large bowl, combine baking powder and flour
- Stir in the milk and eggs, mixing well
- Dip the potatoes into the egg mixture and fry in batches for 5-6 minutes or until golden brown
- Use a metal slotted spoon to transfer to paper towls to drain
- Serve immediately with sour cream and chives, if using
