Rachael Ray: The Kitchen Twins’ Easy Healthy Snacks

Rachael Ray welcomed the Kitchen Twins, who are two young girls who are inspiring families to eat together and eat healthier. Rachael reminded everyone that during the summer of 2016 will be the Kids’ State Dinner. One kid will represent each state. Any kid and their parents can enter for the chance to represent their state by entering the competition online by creating a video. Simply create a recipe that contains healthy grains, lean proteins, and a lot of veggies! Speaking of veggies, the Kitchen Twins’ found a way to make their own healthy snacks, including their Broccoli “Stars” and Cheddar Chips!

Rachael Ray: Kitchen Twins' Broccoli "Stars" & Cheddar Chips

  • 2 tbsp olive oil
  • 2 heads broccoli
  • sea salt

Rachael Ray: The Kitchen Twins’ Broccoli “Stars” Recipe Directions

  1. Preheat the oven to 375 degrees
  2. Cut the stems away from the broccoli and peel the outside of the stem (exactly how you peel a carrot)
  3. Slice the stems into “coins” about the thickness of a nickel, or use a mandolin
  4. Toss the broccoli with a couple tbsp olive oil
  5. Layer in a single layer on a cookie sheet and sprinkle with salt
  6. Bake for 20 minutes, tossing a couple times while they cook
  7. Remove from the oven and enjoy

  • fresh sage – chopped
  • 2 C shredded sharp cheddar cheese

Rachael Ray: The Kitchen Twins’ Cheddar Chips Recipe Directions

  1. Put 1 tbsp of the cheese on a parchment-lined baking sheet
  2. Repeat until all the cheese is used
  3. Sprinkle each pile of cheese with chopped sage
  4. Bake at 375 degrees for about 11 minutes
  5. Remove and enjoy
