Jeff Mauro joined Rachael Ray, Carla Hall, and Emeril Lagasse for Rachael’s Friends-Giving episode, bringing Roasted Broccoli with Asiago and Pine Nuts. Because you can’t come to a friends’ place for Thanksgiving dinner without bringing a dish! Jeff wanted to share a way to bring broccoli without getting a bunch of moans and groans from your family. Rachael Ray: Roasted Broccoli With Asiago & Pine Nuts

If you want a kid to eat broccoli, smother it with cheese! That was Jeff Mauro’s idea behind his Roasted Broccoli dish he brought to Friends-Giving. (gudlyf / Flickr)

  • 1/4 C olive oil
  • 1/2 tsp sugar
  • zest and juice from 1 lemon
  • 1 head broccoli – cut into 1 1/2-inch florets with the stems peeled and sliced
  • 1/2 C shredded Asiago
  • salt and pepper
  • 1/4 C toasted pine nuts

Rachael Ray: Roasted Broccoli With Asiago & Pine Nuts Recipe Directions

  1. Preheat oven to 400 degrees
  2. In a large bowl, toss the broccoli with Asiago, olive oil, salt and pepper, and sugar
  3. Put on a sheet pan in an even layer and roast for 20-30 minutes, tossing halfway
  4. Right before you serve, squeeze fresh lemon juice and top with fresh lemon zest
  5. Scatter pine nus on top
