Even if you’re an amateur in the kitchen, you can still prepare a luxurious and elegant meal for your significant other! She showed viewers how to make Tournedos with Creamed Spinach, using just five ingredients and a few essentials from the pantry. If you haven’t yet purchased a cast-iron skillet, now’s the time! There’s no doubt you’ll impress whoever’s lucky enough to enjoy this meal with you, so just gather your ingredients and follow the directions, and you’ll have date night dinner on the table in no time!

Rachael Ray: Tournedos With Creamed Spinach Recipe

Pantry Essentials:

  • salt and pepper
  • nutmeg (optional)
  • olive oil
  • garlic
  • 1 16-oz bag organic chopped frozen spinach – defrosted
  • 1/2 C grated Parmigiano-Reggiano cheese
  • 4 beef tournedos (filet steaks) – 1 1/4-inch thick
  • 1 1/2 C cream
  • 1/2 C dry sherry or Madiera

Rachael Ray: Tournedos With Creamed Spinach Recipe Directions

  1. Let the steak come to room temperature and season with salt and pepper
  2. Preheat a cast-iron skillet over medium-high heat
  3. Put the spinach in a towel and wring out the liquid
  4. Use your fingers to separate the spinach
  5. Heat another skillet over medium heat and add oil
  6. Chop 4 cloves garlic and add to the skillet
  7. Stir the garlic for a minute then add the spinach and use tongs to toss
  8. Season with salt and pepper, and nutmeg if using
  9. Add the cream and let cook for about 5 minutes to reduce by half
  10. Stir in the cheese and allow the spinach mixture to thicken for 1-2 more minutes
  11. Cook the steaks in the cast-iron skillet for 2-3 minutes per side, until caramelized
  12. Deglaze the pan with the sherry, then remove to plates, 2 tournedos per person
  13. Top each steak with creamed spinach
  14. Serve with good wine and a sweet treat for dessert!
