Rachael Ray: Tournedos With Creamed Spinach Recipe Ingredients

Pantry Essentials:
- salt and pepper
- nutmeg (optional)
- olive oil
- garlic
- 1 16-oz bag organic chopped frozen spinach – defrosted
- 1/2 C grated Parmigiano-Reggiano cheese
- 4 beef tournedos (filet steaks) – 1 1/4-inch thick
- 1 1/2 C cream
- 1/2 C dry sherry or Madiera
Rachael Ray: Tournedos With Creamed Spinach Recipe Directions
- Let the steak come to room temperature and season with salt and pepper
- Preheat a cast-iron skillet over medium-high heat
- Put the spinach in a towel and wring out the liquid
- Use your fingers to separate the spinach
- Heat another skillet over medium heat and add oil
- Chop 4 cloves garlic and add to the skillet
- Stir the garlic for a minute then add the spinach and use tongs to toss
- Season with salt and pepper, and nutmeg if using
- Add the cream and let cook for about 5 minutes to reduce by half
- Stir in the cheese and allow the spinach mixture to thicken for 1-2 more minutes
- Cook the steaks in the cast-iron skillet for 2-3 minutes per side, until caramelized
- Deglaze the pan with the sherry, then remove to plates, 2 tournedos per person
- Top each steak with creamed spinach
- Serve with good wine and a sweet treat for dessert!
