- 1 6-oz container 0% plain Greek yogurt
- 2 cloves garlic – minxed
- 2 tbsp chopped fresh flat-leaf parsley + more for garnish
- 2 tbsp finely grated Parmigiano-Reggiano cheese
- 1 head cauliflower – cut into florets
- 2 tbsp butter
- 2 tbsp chopped fresh dill + more for garnish
- kosher salt and freshly ground pepper
Rachael Ray: Valerie Bertinelli Herbed Mashed Cauliflower Recipe Directions
- Bring a medium pot of water to a boil
- Add the cauliflower and cook until fork-tender, about 8 minutes
- Drain thoroughly and then transfer to a food processor
- Add the butter, yogurt, dill, garlic, and parsley, then process until creamy
- Season with salt and pepper
- Transfer to a warmed bowl, then stir in the chese and garnish with the dill and parsley
- Serve hot
