Valerie Bertinelli shared a recipe for Herbed Mashed Cauliflower, a healthy side dish for your holiday dinner. (rooey / Flickr)

  • 1 6-oz container 0% plain Greek yogurt
  • 2 cloves garlic – minxed
  • 2 tbsp chopped fresh flat-leaf parsley + more for garnish
  • 2 tbsp finely grated Parmigiano-Reggiano cheese
  • 1 head cauliflower – cut into florets
  • 2 tbsp butter
  • 2 tbsp chopped fresh dill + more for garnish
  • kosher salt and freshly ground pepper

Rachael Ray: Valerie Bertinelli Herbed Mashed Cauliflower Recipe Directions

  1. Bring a medium pot of water to a boil
  2. Add the cauliflower and cook until fork-tender, about 8 minutes
  3. Drain thoroughly and then transfer to a food processor
  4. Add the butter, yogurt, dill, garlic, and parsley, then process until creamy
  5. Season with salt and pepper
  6. Transfer to a warmed bowl, then stir in the chese and garnish with the dill and parsley
  7. Serve hot
