Rachael Ray: White Pizza Frittata Recipe Ingredients

- 4 cloves garlic – chopped
- salt and pepper
- 12 eggs
- 1/2 C grated Parmigiano-Reggiano
- 3 tbsp olive oil
- 1 16-oz bag frozen chopped spinach – defrosted, squeezed dry
- freshly grated or ground nutmeg
- 1 C fresh ricotta
- 2 C shredded fresh mozzarella
Rachael Ray: White Pizza Frittata Recipe Directions
- Preheat oven to 400 degrees
- In a 10-inch ovenproof, nonstick skillet, heat the oil over medium-high
- Add the garlic and swirl until fragrant, about 1 minute
- Add the drained spinach, separating by hand
- Season with nutmeg, salt, and pepper
- In a medium bowl, whisk the eggs and then mix in the ricotta and parm to blend
- Pour into the skillet and cook until the edges are set, about 2 minutes
- Transfer to the oven and bake until the top is set, about 12 minutes
- Top with mozzarella and put back in the oven until browned and bubbly, about 5-7 minutes
- Cut the frittata into wedges and serve with a tomato-onion salad
