What’s not to love about brunch, right? That’s exactly how Rachael Ray feels, and explained that it’s actually budget friendly because it combines two meals. Plus, like Rachael said, it’s an excuse to drink during the daytime! She shared a White Pizza Frittata that is perfect for serving at brunch, but can also make for a great dinner recipe! This frittata tastes just like a white pizza, without the crust! Plus, there’s three cheeses so you know it’s going to be good!

Rachael Ray: White Pizza Frittata Recipe

Rachael Ray loves brunch, which is why she shared a recipe for a Frittata that tastes just like white pizza! (neeta_lind / Flickr)

  • 4 cloves garlic – chopped
  • salt and pepper
  • 12 eggs
  • 1/2 C grated Parmigiano-Reggiano
  • 3 tbsp olive oil
  • 1 16-oz bag frozen chopped spinach – defrosted, squeezed dry
  • freshly grated or ground nutmeg
  • 1 C fresh ricotta
  • 2 C shredded fresh mozzarella

Rachael Ray: White Pizza Frittata Recipe Directions

  1. Preheat oven to 400 degrees
  2. In a 10-inch ovenproof, nonstick skillet, heat the oil over medium-high
  3. Add the garlic and swirl until fragrant, about 1 minute
  4. Add the drained spinach, separating by hand
  5. Season with nutmeg, salt, and pepper
  6. In a medium bowl, whisk the eggs and then mix in the ricotta and parm to blend
  7. Pour into the skillet and cook until the edges are set, about 2 minutes
  8. Transfer to the oven and bake until the top is set, about 12 minutes
  9. Top with mozzarella and put back in the oven until browned and bubbly, about 5-7 minutes
  10. Cut the frittata into wedges and serve with a tomato-onion salad
