Munah explained that cooking in the kitchen was her secret, that way she knew exactly what she was putting in her body. She loves to make Black Bean Quinoa Burgers for her family, saying that even her pickiest eater loves them so much, some weeks she’ll make them three times a week!

The Chew: Black Bean Quinoa Burger Recipe

  • 1/4 C quinoa
  • 2/3 C almond meal
  • 3 tbsp onion – minced
  • 1 tsp ground cumin
  • 1 tsp hot pepper sauce
  • 3 tbsp olive oil
  • 1 can black beans – rinsed, drained, 15 oz
  • 1/2 C water
  • 1/4 C yellow bell pepper – seeded, minced
  • 2 clove garlic – minced
  • 1/2 tsp Kosher salt
  • 1 large egg
  • bibb lettuce – to serve

The Chew: Black Bean Quinoa Burger Recipe Directions

  1. In a saucepan, add the quinoa and water, and bring to a boil
  2. Reduce the heat to medium-low, cover and simmer until the water has been absorbed, about 15-20 minutes
  3. Fluff with a fork
  4. In a mediu bowl, add the black beans and mash, using a fork, leaving some of the black beans whole
  5. In a large bowl, add the quinoa, almond meal, onion, bell pepper, cumin, salt, eggs, and hot pepper sauce, then mix
  6. Add the black bean mixture and mix
  7. Form the mixture into 5 patties
  8. In a large skillet, add olive oil and heat over medium-high heat
  9. Add the patties and cook until browned and warm, about 2-3 minutes per side
  10. Serve the black bean quinoa burgers in lettuce wraps
