Summer Potato Salad Ingredients
- 2 Pounds Fingerling Potatoes (Sliced 1/2 Inch Thick)
- 2 Cups Snow Peas (Sliced 1/2 Inch Thick on Bias)
- 1 Bunch Radishes (Quartered)
- 1 Granny Smith Apple (Peeled; Cut into Matchsticks)
- 2 Tablespoons Capers (Chopped)
- 1/4 Cup Dill (Chopped)
- 2 Tablespoons Chives (Sliced)
Grainy Mustard Vinaigrette Ingredients
- 1 Tablespoon Grated Yellow Onion
- 2 Tablespoons Apple Cider Vinegar
- 2 Tablespoons Grainy Dijon Mustard
- 2 Teaspoons Honey
- 1/4 Cup Olive Oil
- Kosher Salt
- Black Pepper
Daphne Oz: The Chew Summer Potato Salad with Grainy Mustard Vinaigrette Recipe Directions
- Salt a pot full of cold water and add the fingerling potatoes. Bring to a boil, then reduce heat to a simmer. Cook for 8 to 10 minutes until cooked through.
- Meanwhile, mix together the vinaigrette by combining the Dijon mustard, yellow onion, apple cider vinegar, honey, salt, pepper, and olive oil.
- Add the snap peas, radishes, apples, capers, dill, and chives. Toss everything together.
- Finally, add the potatoes and toss once again.
- Taste to see what you think of it. Does it need more salt and pepper? More of something else? Add what you think it needs and then call it good.
- Serve and enjoy!
