If you ask me, nothing will get you out of bed like pancakes, and this is an easy recipe using fresh, healthy ingredients your body will thank you for! If you’re limited on time, you can still whip up these pancakes, but if you do have the time, Michael suggested letting the batter rest for 30-60 minutes to guarantee even lighter, fluffier pancakes!

Michael Symon made over your usual breakfast by making Greek Yogurt Pancakes with Blueberries and Honey, to start your day off right. (preppybyday / Flickr)
- 1 large egg
- 1 tsp vanilla
- 1 lemon – zested
- 1/4 tsp salt
- 2 tbsp unsalted butter
- 1/2 C sliced almonds – lightly toasted, to garnish
- 2/3 C Greek yogurt
- 2 tbsp sugar
- 1/4 C milk
- 1/2 C flour
- 1 tsp baking soda
- 1 C blueberries – to garnish
- 1/4 C honey – to serve
The Chew: Greek Yogurt Pancakes With Blueberries & Honey Recipe Directions
- In a large mixing bowl, add the egg, yourt, sugar, milk, vanilla, and lemon zest
- Whisk to mix
- In a separate bowl, whisk together the salt, flour, and baking soda, then add the dry mix to the yogurt mix
- Whisk to combine then let the batter rest for 10 minutes
- Put a griddle pan over medium heat
- When the pan is hot, add half of the butter
- Spoon or ladle some of the pancakes out then sprinkle each one with the blueberries and almonds
- Cook until the batter starts to bubble then flip and keep cooking until golden brown
- Repeat with the rest of the batter
- To serve, drizzle the pancakes with honey and garnish with any leftover blueberries and almonds
