Mario Batali welcomed mother-daughter actress duo, Whoopi Goldberg and her daughter Alex Martin. Although Whoopi doesn’t cook much herself, Alex enjoys cooking, especially for her children. Mario wanted to share with them a flavor-packed way to make grilled skirt steak and mashed potatoes. Naturally, this wasn’t just any old recipe for steak and potatoes!

The Chew: Grilled Skirt Steak With Black Truffle Vinaigrette & Mashed Potatoes Recipe Ingredients

- 1 tbsp rosemary – chopped
- 2 shallots – minced
- 2 tbsp balsamic vinegar
- 1 1/2 lbs Yukon Gold potatoes – peeled and quartered
- 1 1/2 lbs skirt steak
- 6 tbsp extra-virgin olive oil – divided
- 2 tbsp black truffle – chopped, fresh, or canned
- 2 tbsp apple cider vinegar
- kosher salt and freshly ground black pepper
The Chew: Grilled Skirt Steak With Black Truffle Vinaigrette & Mashed Potatoes Recipe Directions
For the Skirt Steak:
- Heat a grill or grill-pan to medium-high heat
- Season the skirt steak generously on both sides with rosemary, salt, and freshly ground black pepper
- Lightly coat both sides of the steak with olive oil
- Grill the steak to desired doneness, about 4-5 minutes per side for rare
- Remove the steak to a cutting board and rest for 10 minutes before slicing
For the Vinaigrette:
- In a mixing bowl, add the shallots, black truffle, balsamic vinegar, and apple cider vinegar
- Use a whisk to slowly stir in 1/4 C olive oil
- Season with salt and pepper to taste
To Serve:
- Slice the steak on a bias against the grain
- Drizzle with Black Truffle Vinaigrette and serve with Yukon Mashed Potatoes
For the Yukon Mashed Potatoes:
- In a large pot, add potatoes and enough cold water to cover by an inch
- Add a pinch of salt and bring to a boil
- Simmer for 15-20 minutes, until potatoes are fork tender, then drain
- In a large bowl, add the potatoes, 2 tbsp olive oil, and a pinch of salt and pepper
- Use a potato masher to mash the potatoes
- Use a wooden spoon to combine
