The Chew: Leftover Stuffing Croquettes
Carla Hall was bursting with excitement as she stepped into the kitchen to share a unique way to use leftover stuffing. Because some stuffing just doesn’t taste as good the second time around, why not turn it into another dish entirely? She took leftover sausage stuffing and leftover turkey and gravy, to make croquettes. It’s basically a fried ball of stuffing and turkey, how can you go wrong?

The Chew: Leftover Stuffing Croquettes + Spicy Cranberry Apple Relish Recipe Ingredients

- 1 large egg
- 1/2 C leftover turkey meat and gravy – finely chopped
- canola or vegetable oil – for frying
- 3 1/2 C leftover stuffing
- 3/4 C all-purpose flour
- 1 C panko breadcrumbs
- 1 recipe Carla’s Spicy Cranberry Apple Relish (see below)
For the Spicy Cranberry Apple Relish:
- 2 Serrano peppers – sliced
- 1/2 C dry red wine
- 1 tsp ground coriander
- 1 lb fresh or frozen cranberries – thawed if frozen
- 1 medium yellow onion – finely diced
- 1 1/2 C brown sugar
- 2 strips lemon
- 1 tsp kosher salt
- 4 gala apples – peeled, cored, and 1/2-inch dice
The Chew: Leftover Stuffing Croquettes + Spicy Cranberry Apple Relish Recipe Directions
- In a large, heavy-bottomed pot, add a few inches of oil
- Put over medium-high heat and preheat to 360 degrees
- In a food processor, add the stuffing
- Pulse until the stuffing is broken and just shy of smooth
- Add th egg and flour, and pulse until combined
- Using a large spoon, take a heaping spoonful of the stuffing
- Using our thumb, make a deep well into the mixture, put 2 tsp of the turkey gravy mixture in the center
- Seal the turkey and gravy into the stuffing mixture
- Form into a football shape using the large spoon
- Into a baking dish, add th epanko breadcrumbs and then roll the formed croquettes in the breadcrumbs, shaking off any excess
- Carefully drop into the preheated oil
- Deep fry for 5 minutes, until golden brown and crispy
- Use a spider to remove the croquettes to a paper towel-lined plate
- Season immediately with salt
- Serve with Carla’s Spicy Cranberry Apple Relish
For the Spicy Cranberry Apple Relish:
- In a medium saucepan, add the onion, Serrano chilies, lemon zest, brown sugar, salt, and coriander
- Bring to a boil over high heat, then stir to dissolve the sugar
- Reduce the heat to a simmer and cook for 15 minutes
- Add the cranberries and apples, then simmer for 20 minutes or until the cranberries and onion are softened (the sauce should be a rich red color)
- Remove and throw away the lemon zest
- Let the sauce cool to room temperature before serving
- Cover and keep in the fridge for up to two weeks
