The Chew: Make-Ahead Mashed Potatoes

The Chew: Make-Ahead Mashed Potatoes Recipe Ingredients

- 12 tbsp unsalted butter – softened
- 1 tsp nutmeg
- flaky sea salt and freshly ground black pepper
- 5 1/2 lbs potatoes for mashing (like Yukon Gold)
- 1 C sour cream
- 1/3 C Parmesan – shredded
For the Topping:
- 5 tbsp unsalted butter – softened
- 3/4 C dried breadcrumbs
- 1/2 C Parmesan cheese – shredded
The Chew: Make-Ahead Mashed Potatoes Recipe Directions
- Preheat the oven to 400 degrees
- In a large saucepan of salted water, add the peeled ptoatoes and bring to a boil
- Lower the heat slightly and cook until the potatoes are tender and soft (allow about 30 minutes once the water has come to a boil)
- Before you drain the potatoes, reserve 2 C of the cooking water, then drain the potatoes and put them back in the hot dry pan, with the lid on, but off the heat
- In a small saucepan, melt the butter and the sour cream
- Pour it over the cooked and drained potatoes in the warm pot, and mash while slowly addng some of the saved potato cooking water to get the right consistency
- Keep the mixture loose, because it will thicken on standing and reheating
- Add the nutmeg, pepper, Parmesan and sea salt
- Spoon the mashed potatoes into a wide, shallow, ovenporoof dish, then smooth the top
- In a bowl, add the breadcrumbs and butter a teaspoon at a time, then mix together to form a lumpy crumb topping
- Spoon over the top of the potatoes then sprinkle with Parmesan
- Bake for 30 minutes or until hot
